Chocolate Chips, Brown Sugar, & Depression: A Recipe for Your Twenties…
In this episode I'm breaking down the basics of a chocolate chip cookie - how to jazz it up or dress it down. I also discuss depression, mental health, and what the notion of a "mental health crisis" means to me.

Recipe for Chocolate Chip Cookies:
4.5 cups of flour
1.5 cups of sugar
1.5 cups of dark brown sugar
1 teaspoon baking soda
1 teaspoon salt
1 heaping teaspoon espresso powder
1 tablespoon vanilla extract
1 teaspoon almond extract
2 eggs (room temperature)
4.5 sticks of butter, unsalted (room temperature)
4oz regular sized chocolate chips (semi-sweet)
24oz mini chocolate chips (semi-sweet)

Pre-heat oven to 350.
Combine all dry ingredients (Except chips) and extracts.
Add in butter and mix with your hands until combined and "Crumbly" (like sand, panko, or dirt) in appearance.
Add in egg and chocolate chips at the same time, and combine until a dough is formed.
Chill for 15 min or overnight, then scoop into 1.5 tablespoon balls (with a scoop or a large spoon) and roll until smooth. You can store these in the fridge for up to 2 weeks, or freeze for up to 4 months.
Bake on a baking sheet lined with parchment paper (or a baking sheet sprayed with pam or non-stick spray) at 350 for 7-10 minutes. You want the edges to be golden while the middle is a shade or two paler in comparison. If you prefer a crispier cookie, flatten out the dough balls into rounds before baking. If you want a cracky appearance, add in a teaspoon of cream of tartar to your dry ingredients.
Yields 6-8 dozen. Scales down nicely!
